Heyz allemaal! Vandaag heb ik 20l cranberry-appelsien mede gemaakt. Recept is hieronder te vinden (in't Engels, is post vanop andere forum en ben te lui/moe/hongerig om het te vertalen).
Today I made my biggest batch of mead to day. I made 20l of cranberry orange mead. Here's what I did:
Ingredients:
- approx. 6.5kgs of honey: 6kgs of locally harvested flowerhoney and 0.5kgs of orange blossom honey
- 5l cranberry juice
- 5l spring water
- 5.5l tap water
- 4 cinnamon sticks
- 6 cloves
- 6 all spice berries
- 8 small organic oranges
- 5g yeast nutrient
- 6g Bioferm DOUX yeast
I opted for a 'no boil' method to preserve the flavour of the honey more. I put the honey in a large 30l fermenting bucket, heated the tap water and rinsed the bucket and pots of honey with this water. I added the yeast nutrient dissolved in a bit of boiled water. Added the boiled (for approx. 5mins) tap water to the honey and whisked until all was dissolved. Then I added the cranberry juice and spring water, spices and oranges (cut in smallish pieces) and whisked for 5mins for aeration. When cool enough I added the rehydrated yeast, shut the bucket, said a small prayer to the Mead Gods and put it in our living room. I hope it starts to ferment fast; as always I am weary of infections etc...
I also made a small (9l) bucket of beer from a beer-making-kit.
Fingers crossed!!!
Edit: didn't measure SG of the must because I thought it was not accurate with the oranges floating in it. After first racking (one month I guess) I'll measure it and then follow up fermentation.
